Description
Ground beef sirloin filled corn tortillas topped with piles of cheese and a warm tomato salsa. It all makes for a wonderfully scrumptious enchilada for the whole family. Oven-ready for ease, ole! Served with Arroz Amarillo aka yellow rice.
Preparation Time: None
Cook Time: 15 Minutes
Ingredients:
Ground beef sirloin, tomatoes, corn tortilla, poblano peppers, onions, mexican cheese, crushed tomatoes, garlic, cilantro (rice), spices
Cooking Instructions:
1. Preheat oven to 350 degrees. 2. Bake enchilada uncovered for 15-20 minutes or until hot and bubbly. 3. Serve with rice

Tasty
  These were good enchiladas. The sauce is very mild. Generous portion of 3 enchiladas / person means we had plenty of leftovers.

It’s truly tasty and so easy!
  Have been ordering these ground sirloin enchiladas for years, and both my husband and me really love this tasty dinner! The enchiladas just get put in the oven, the sauce is very tasty, a different take on enchilada sauce, but a homemade tasting cumin-laced tomato-based sauce. Yummy! I always order a side either chef’s choice salad or chef’s choice vegetables! Such a deal! And the dressings are obviously ‘homemade, no Sysco here!” The olive oil herb/salt/pepper is a great accompaniment to he side vegetables! And did a I mention, there are houst two of us in our home? And we invite a few of ourc’quaranteam CV 19=group’ and have plenty, usually for 4 people, ordering a 2 dinner order! Love, love Maria’s Gourmet a kitchen!

Not Tex-Mex
  When I saw the tomato based sauce, I was prepared to be disappointed, but much to my surprise, these were very tasty and very filling. I spread the extra sauce over the top before baking as I was worried the top would dry out and baked a few minutes longer. These definitely aren't your typical Tex-Mex enchiladas, but if you keep an open mind, I think you'll enjoy them as much as we did!

One of my faves!
  This was our first time trying this dish. It was awesome and big serving sizes. My husband even had some for lunch the next day. Best rice IĂ­ve ever had! So easy...pop in oven, heat rice & sauce and bamm dinner!

Sabroso!
  These enchiladas were delicious and, as always, her rice was spot on. It was very filling and we made two meals out of two servings for the two of us which makes it very reasonable. Though my husband said he could have eaten it all in one meal it was so good.

A favorite!
  This was delicious! Very flavorful and easy to make - it only took 15 minutes! The seasonings were great, and there were not a lot of onions which we liked. Yummy! A great new dish.

Beef Enchilada
  Beef Enchilada & Rice are very good. Baking the enchilada uncovered with no sauce makes them very dry. Need more of a Tex Mex sauce, not a tomato sauce over the enchiladas & bake covered to keep them moist.
