Chicken & Andouille Jambalaya

Description |
The famous New Orleans version with chicken and andouille sausage together with the "holy trinity" of onion, celery and green bell pepper veggies. Classic Louisiana creole cuisine tracing its roots back to Spanish Paella and French Jambalaia. |

Cook Time: 30 minutes |
Ingredients: |
Chicken breast, andouille sausage, celery, onion, green bell pepper, scallions, tomatoes, garlic, rice, chicken broth, oil, spices |
Cooking Instructions: |
Lightly cover pan with oil and heat on medium heat. Saute chicken until light brown. Add sausage and cook for 5 mins. Add vegetable pack and saute for 5 mins. Add spice pack. Saute 1 min. Add rice. Cook for 2 mins. Add tomato broth, bring to a boil, then simmer. Cover and simmer for 15 min or until liquid is absorbed. |

This was quite good and very generous portions. Mildly spicy but my spice-sensitive family member was ok with it. This one does have more extensive cook time than a typical MGK meal. I believe this is primarily due to the rice coming uncooked. I would say this was about 40 minutes start to finish in my kitchen. I would order again but would probably save to cook on the weekend rather than a weeknight. |

Everything Maria delivers is delicious! Only thing that kept 5 stars, was the chicken portion was small. Lots of sausage, not enough chicken. Usually portion sizes are great! Also this would be even better with shrimp! |
