This is your traditional Tex Mex fajitas but with a twist that was shared with Maria by a dear friend. The flavor in the steak comes to life as a result of a special marinade that's a mix of pineapple juice, soy sauce, cilantro and spices. Served with Maria's black beans, homemade salsa and fresh tortillas, these fajitas are unlike any other!

Ingredients

Skirt Steak, Soy Sauce, Pineapple Juice, Lemon Juice, Wine, Worcestershire Sauce, Oil, Vinegar, Onions, Cilantro and Spices. Served with homemade salsa, black beans and fresh tortillas.

Cooking Instructions

Preheat grill.
Grill steak about 4 minutes per side until cooked.
Let steak rest for 3 minutes before slicing.
Cut the steak against the grain into slices and square cubes, if desired.
Reheat the beans and serve with steak, salsa and tortillas.

YUM!

These were so easy and delish, I only wish there were some marinated onions & peppers to grill! Beans delish, salsa good (just needs a tiny bit of spice, please!). Tortillas yummy, didn't taste store bought. Will be on our regular rotation for sure!

Delicioso!

We order Maria's beef fajitas every time they are available. The skirt steak is top quality and the tortillas are soft and delicious. We also enjoy the black beans. We normally add shredded cheese to the fajitas if we have it on hand, and serve tortilla chips with the meal, so we don't waste a drop of Maria's homemade red salsa.

Fajitas - meh

These were okay. The tortillas were delicious. I'm not a fan of the seasoning/marinade used for the fajitas. The black beans were nothing to write home about. Definitely not my favorite Maria's meal.

Spices were overwhelming!

Not good at all. A shame that nice piece of beef had strong spices and much too salty. We actually could not eat it. We had the chicken fajitas and enjoyed them but this was not to our taste at all. Won't reorder.

Delicious and tender meat

Anytime we order beef from Maria we are amazed at the flavor and how tender it is. There are 6 tortillas but her portions are so generous we always have meat leftover...but that's ok...it makes great leftovers. It's so flavorful I don't miss not having cheese etc to put on it.

Yum!

Ole!! This was really really delicious. I don't love red meat but I was digging this meal. The meat was marinated perfectly and everything was super fresh and easy to prepare. Only thing I would add would be some shredded cheese and more tortillas!! I made this for company and everyone loved it.

Grilled Fajitas

One could taste the special marinade used for this meal. Indeed, it was different than the regular fajitas. Both my husband and I have enjoyed this dinner very much, specially the homemade salsa that came with it. Thank you Maria.
