Mediterranean Chicken with Olives

Love the flavor the olives (two types) give this meal. This is another winner for us.

This dish was so tasty. Truly restaurant quality meal in 30 minutes. Flavor that will knock your socks off!!

This was my first time preparing a Mediterranean meal and I must say that it was a lot of fun. The chicken was very tender and moist and had a unique flavor. I loved the oil blend for the potatoes and it went well with the chicken. I'm not a fan of olives but my mom loved it with the olives and enjoyed her meal. I enjoyed the mesh of flavors and it tasted great that day. I even had some for the next day. I would definitely have to admit that I enjoyed it better the day of. I would definitely give this dish a try if you are looking for a healthy yet flavorful meal.

My family usually loves Maria's meals, but this one just wasn't for us. The potatoes were a bit bland and, while the chicken was very tender, we didn't much care for the sauce.

Easy, healthy and even my picky hubs and 2 year old enjoyed it.

If any of you have not tried Maria's Gourment Kitchen dishes, many of the chicken dishes arrive with already flattened breast meat boneless pieces of chicken. This particular dish has about 6 pieces, (for 2 people)…it really feeds 3-4 if you are not a huge eater. The olive, red onion, herb wine sauce is just really yummy, and the flour to slightly dredge them in before you sauté is even peppered and herbed. Comes in a little baggie, exactly how much you need, just throw each piece in bag…I often just put the flour on a plate and just turn on each side…and voila, 2-3 minutes per side, throw the already prepared and in a bag sauce over and simmer for 5 minutes, while fresh cut up potatoes with olive oil/herb mixture over them (That mixture comes in a small plastic container)…recyclable. It's just dinner if you add in your own salad or veggie. I am going to take a picture next time of how things look when they arrive in the wonderful cold bag on porch!!

I normally don't prefer chicken breasts, but I tried this dish and learned a whole new way of cooking it that really blew my mind. I followed the directions exactly and was utterly thrilled at the tenderness of the chicken. The olives added a spectacular pop. Super-quick & easy to make.

Maria's mediterranean seasoning of this chicken makes it a very enjoyable meal.

So love the seasonings and anything with olives and roasted potatoes has to be good.

The seasonings for the chicken and potatoes had my mouth watering before I even started putting he meal together. Minimal work for maximum taste!!
