Peruvian Roast Chicken

Description |
Paprika spiced chicken thighs roasted in the oven skin on served with green beans and a Aji Verde (tangy green) sauce. Tender, juicy and delicious. |

Ingredients: |
Chicken thighs, green beans, onions, garlic, jalapeno, cilantro, lemon juice, oregano, paprika, cumin, sugar, mayonaise, sour cream, corrander, olive oil, salt/pepper |
Cooking Instructions: |
Preheat oven to 425 degrees. Place the chicken in the oven and bake for 40 minutes or until thigh temperature reads 165F. Coat a sauce pan with oil and heat on medium high heat. Add onions and saute for 2 mins. Add green beans and reduce heat to low heat. Saute for about 8 to 10 mins or until desired tenderness. Stir in spice pack and cook for an additional minute. |

The Peruvian Chicken was soo flavorful and moist. This is my favorite meal so far. I will be craving it until it is on the menu again! |

LIKE This dish so very much, I usually order 4 servings, to have with family we have been quarantehming with during COVID 19. Without a doubt, best sauce, tasty6 and juicy, beautifully spiced chicken thighs and great green beans. Very easy to follow directions, prep time is longer than usual, but so worth the wait. |

I'm not a huge fan of chicken thighs and wasn't expecting that I would enjoy this as much as I did. The seasoning is fabulous and the ahi verde sauce puts it over the top (we poured it on the chicken and the green beans). Love the seasoning on the green beans. Because of a health issue, I have to eat my vegetables on the softer side (much to my dismay). I following the directions, but added a couple of tablespoons of water and covered with a lid for the last 3 or 4 minutes of cooking. Super enjoyable meal. |
